Yesterday, my kiddos went back to school . . . and Dean and David STARTED school!
Last school year we ran into a problem with breakfast. Mainly, I didn’t make it so the kids didn’t eat it. I know the importance of breakfast and really did want my kids to eat breakfast before they went to school BUT we were always running late and it always seemed to get pushed to the side.
Now . . . I’m not saying my poor children were starving all morning and fell into those statistics of kids who couldn’t concentrate because they hadn’t had a balanced meal first thing in the morning. They ate breakfast at school. So – it wasn’t horrible but I totally felt like a loser mom because I couldn’t give my kids a good breakfast before they started their day.
I am determined to change that this year! I’ve started off strong and am hoping that I can keep up the good work as the year goes on!
So – you, too want to be able to give your children a good breakfast before they board that bus? Here’s what I did (with the help of my sister) to get a good start!
Of course, the first place we went was Pinterest. Christine and I have a More Than Mommies Pinterest account but long before we even started blogging together I had a Pinterest account and I started tucking away some recipes for easy breakfasts that could be frozen and reheated. I’ve now created a board on our More Than Mommies account! After looking over all of the recipes we had on the boards we picked a few to go ahead and give a try. We made Puffins (pancake muffins), French Toast Sticks, Breakfast Burritos (we substituted ham for the sausage – my kids love ham) and then . . . we went out on our own and combined a few pins to create this masterpiece I’m going to share with you today. I call them the All-In-One Breakfast To-Go. (but I’m not thrilled with that name, so if you have a better name for them I’d love to hear it!)
Here’s the recipe (complete with pictures!)
All-In-One Breakfast To-Go
1 bag of Tater Tots
About 6 eggs
(I can’t remember exactly how many I used on this because we did the burritos the same day and I must have cracked 45 eggs that day!)
1 and 1/2 cups of shredded cheddar cheese
1 package of pre-cooked bacon (the microwave kind – about 15 slices, I think)
Set your oven to 350 and spray a muffin tin with some cooking spray! Then you are ready to start putting these babies together.
First, put a layer of Tater Tots on the bottom. We let them thaw a little bit so that we could break them in half.
Then put the bacon on top of the tater tots . . . our thinking was that cheap bacon (already cooked so I don’t have bacon grease to clean up) was okay because we weren’t eating it by itself but in a “muffin” of sort.
After the bacon, we sprinkled some shredded cheddar on top.
The last step was to pour the eggs (after you have beaten them) on top of the whole thing. I filled the muffin tin about 3/4 the way full with the egg mixture . . . it really didn’t take much!
Pop them in a 350 degree oven for about 20 minutes . . . then let them cool.
Here is what you end up with:
We wrapped them up and stuck them in the freezer. In the morning, the kids can unwrap one, stick it on a plate and put it in the microwave for about 30 – 45 seconds and they are good to go!
If you try these, let me know what you think! I’m thinking about making some for me with mushrooms in them instead of bacon but I am not sure how mushrooms freeze.
